Crispy outside with sweet red bean paste and salted egg yolk filling make you can't help but salivate!
Yolk Pastry is one of the most popular traditional pastries in Taiwan. I prefer Yolk pastry more than moon cake.
Therefore, today, I am going to teach you how to make this dessert!

Material
🔺 Puff pastry
* All-Purpose Flour(Plain Flour)100g
* Unsalted Butter 35g
* Water 55g
* Icing sugar 15g
🔺Shortcrust pastry
* All-Purpose Flour(Plain Flour)90g
* Unsalted Butter 60g
🔺Stuffing
* 10 salted egg yolks
* Sweet bean paste 100-150g
🔺Decoration
* Black sesame (a little)
* 1 egg yolk
The followings are the steps:

📌Step 1 Make puff pastry
First of all, put all the puff pastry materials (All-purpose flour, icing sugar, unsalted butter, water)into the steel basin and mix them into a dough.
➡️ Let the dough rest in the refrigerator for 30 minutes to 1 hour.
📌Step2 Make the shortcrust pastry
Only need to mix the all-purpose flour
and unsalted butter and let rest for about 5-10 minutes.
🕙 When waiting for the puff pastry, we can put the salted egg yolks into the oven (160 degrees) for about 15 minutes until the egg yolks look a little white.
📌 Step3 Mix the puff pastry and shortcrust pastry
Take the puff pastry out of the refrigerator and divide the puff pastry and shortcrust pastry into 10 equal parts.
Then wrap the shortcrust pastry in the puff pastry. Roll the dough into a flat shape, roll up like a croissant (do this step twice).

📌Step4 Wrap salted egg yolk in red bean paste
Take out the baked salted egg yolk and let it cool.
First, wrap the red bean paste outside the salted egg yolk (this part can adjust the amount of red bean paste depending on personal preference) and make it into a red bean paste ball.

📌Step5 Wrap the mixed dough around the red bean paste ball.
Roll the mixed dough into a flat shape and wrap it outside the red bean paste ball.
Notice: Wrap the dough carefully so it doesn't pop when baking.

📌step6 Spread with egg yolk and sprinkled with sesame seeds
Spread the egg yolk on the yolk pastry and sprinkled it with sesame seeds. Then, you can put them into the oven.

📌Step7 Bake in the oven
Preheat the oven to 180 degrees for 10-15 minutes, then put the yolk pastry in the oven. Adjust the oven to 160 degrees, and bake for about 15 minutes.
(If you want to bake a little more brown, you can bake a little longer!)
Finally, you will get a delicious yolk pastry. You can pack it as a gift for your friends or eat it by yourself!
