每次看到舒芙蕾系列的甜點,是否都會覺得感覺好困難呀!

看起來超級美味,重點口感綿密而不膩。


其實所有的甜點都是慢~工~出細活。

舒芙蕾鬆餅也是一樣,材料、步驟都相當簡單,但最困難的部分就是在煎鬆餅的過程。

想要做出漂亮的舒芙蕾鬆餅,就耐心的小火慢煎吧!


Every time when looking at the Soufflé dessert, you will feel that this kind of dessert definitely hard to be made. It looks super delicious and the key point is that the taste is dense and not greasy.

For me, I really like Soufflé pancake because it is very simple to make by yourself. You do not need to use the oven, only need to have a pan!

Honestly, all desserts come from slow work and if you would like to make them successfully, don't forget to be patient. The most difficult part of making Soufflé pancake is the process of making it in a pan.

So, let's start with the material.


第一部分:準備食材 (parper the materials)


準備材料 material (2 pieces)

* 2個 雞蛋 2 egg

* 牛奶 milk 20ml

* 細砂糖 sugar 30g

* 低筋麵粉 cake flour 30g

* 植物油 vegetable oil (I use olive oil )10ml

* 水果(選自己喜歡的)fruit ( choose your favourite fruits as a decoration on the pancake)

* 蜂蜜或楓糖漿 honey or maple syrup



製作過程 Follow the each step

📌Step 1

先將蛋白跟蛋黃分開,蛋黃與10g的細砂糖混合打散,打到看不到砂糖顆粒即可 First, separate the egg whites from the egg yolks, mix the egg yolks with 10g of sugar and mix them until no sugar particles are visible.

📌Step 2 加入過篩麵粉,橄欖油以及牛奶,攪拌到看不到顆粒即可

Add sifted flour, olive oil and milk, then stir until no lumps are visible 📌Step 3 將蛋白與剩餘的細砂糖打發 (記住:砂糖分三次依序加入蛋白中,不要一口氣全加入),將蛋白霜打發至中性發泡就可停止囉

Whipped egg whites and remaining sugar (notice: Add the sugar to the egg whites in three steps, don't add them all at once). Whip the egg whites close to the dry peak and stop.

📌Step 4 混合蛋白霜跟剛剛的蛋黃,攪拌時要輕輕攪拌,避免蛋白霜消泡喔! 攪拌均勻後,麵糊就完成了

Mixe the whipping egg white and the yolks. Make sure to mix them gently. After mixing well, the batter is done.

📌Step 5 平底鍋上少許的油(可用奶油或橄欖油都可以,奶油會比較香) 麵糊可以放入擠花袋或者直接用湯勺挖取適量放入平底鍋 先放第一層,煎大約5分鐘後在鋪第二層,這個步驟火不能太大,也要有耐心等待鬆餅上色 等到厚度達到自己心中期望的高度後,就可翻面了! (切記要用小火慢煎喔!)

The most difficult part is coming!

  1. put a little oil in the pan ( you can use butter or olive oil as you prefer), and cook on low heat.

  2. put a few half batters in the pan ( you can put the batter in the piping bag and mount the batter in the pan or just use a spoon to scoop the batter in the pan).

  3. when the first batter has been cooked (about 5 minutes) then you can mount the second batter on the first one.

  4. Once you see the pancake has some colour and the thickness of the pancake reaches the height as your expectation, you're ready to flip.

📌Step 6 起鍋後,就可以擺上自己喜歡的水果淋上糖漿就完成囉!

After the pancake is made, you can put your favourite fruits and drizzle them with syrup and you're done!



只要有耐心,一定可以煎出很漂亮的舒芙蕾鬆餅~~
